Knife Sharpening
For a knife to be sharp, the blade needs to be set to a specific angle. To sharpen the knife remove some of the blade to return it to that angle. There are different ways to sharpen a knife. Some will use a power grinder to strip away the metal, taking off as far more than necessary. But there is a better way.
My Process
I use a process where I take off as much as necessary but always as little as possible. I hand sharpen knives on a series of water stones. The process starts with a 1200 grit waterstone, then honed using additional finer grits.

I test every single knife to ensure the blade is sharp from tip to tilt. I also will follow up with you several days later to ensure you have noticed a positive improvement in your knives as well.
